Craving a gut loving sweet treat before bed? We’ve got you… being on a nutrition plan doesn’t mean you have to cut out your favourite foods! These cookies + a glass of kombucha will leave you going to sleep with a happy tummy 👏🏻🤎🧘🏼‍♀️

  • 1/2 cup coconut oil, melted
  • 1/3 cup brown sugar, packed
  • 1/3 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 (140 g) cups rolled oats
  • 2/3 cup (84 g) all purpose flour 
  • 1/2 cup large flaked coconut (unsweetened)
  • 1/2 cup chopped nuts (I used pecans)
  • 1/2 cup chocolate chips (or chopped chocolate of your choice)

Mix all together, form your cookies and bake at 180 fanbake for about 12mins until golden brown.
